A John Dean Favorite, Made by Mama Celtnieks

The recipe is called "Yankee Doodles" and it has been a family favorite since my grandfather was a kid in the 1930's. In the past year, fellow staff member John Dean has grown rather fond of this dish, and now I am posting the recipe to hopefully allow you to smile as radiantly as John Dean does when he eats this dish.

"Yankee Doodles"

Serves: One absolutely famished John Dean, or 4-6 people

You Will Need:

  • A pan to boil the water
  • A 4-quart casserole dish
Ingredients:

  • 1 lb. sea shell pasta, medium size
  • 1 lb. colby longhorn cheese
  • 2,  8 oz cans of tomato sauce
  • 1, 16 oz can of whole tomatoes
  • 1/2 stick of butter
  • Salt and pepper to taste

Procedure:
Bring a large pan of salted water to a rapid boil. Cook shells to almost, but not quite, done. While shells cook, medium chop the whole tomatoes. In a 4 quart casserole pan or dish, combine chopped tomatoes and tomato sauce with drained shells. Cut the cheese into half bite size chunks and the butter into slices, mix all ingredients spread well and evenly throughout the dish. Put in oven heated to 350 degrees for 45 minutes to one hour depending on how crispy you like the pasta crust. Enjoy!
